For September we are doing a hot sauce special at the Fine and Dandy. We will have some special edition hot sauces, lots of recipe cards, some beautiful tasters, and maybe even a few giveaways! All in honour of the humble chilli!
Oriel Sea Salt comes in 3 varieties. The Natural Sea Salt is put immediately into tubs without any further processing. It is slightly damp and great sprinkled directly on food (perfect with spice rubs). The Kiln Dried is dried in a kiln so it is more free flowing (use it at the table). Our favourite is the Teelings Whiskey Smoked which is oak smoked using old whiskey barrels (use it on and in everything!!).
It's been a very slow start to production in GNL towers in 2018, but today we made up a batch of Gullion's Ghost. A few secret spices, Irish red onions, Irish carrots, raw cane sugar, and a ridiculous amount of very expensive ghost chillies are sitting in a brine made with Irish sea salt.
The good people of Dún Dealgan are always asking us where they can pick up a few bottles of sauce when their supplies run out. We now have a stockist right in the heart of the town in Park Street. Stevie has Browne's Sauce, Ketchup, Gullion's Fire, and a variety of jams and chutneys for you to take away with your coffee.
